Butterbeer Rice Krispie Treats Inspired by Harry Potter
There is honestly nothing more refreshing than an ice-cold frozen Butterbeer after a hot morning spent in Diagon Alley at Universal Studios. After the ride lines get too long, we like to skip the crowds and sneak away to a quiet table at the Leaky Cauldron and indulge in this sweet and creamy frosty concoction. Inspired by this signature Harry Potter beverage, I am sharing my Butterbeer Rice Krispie Treats today in honor of the son of Gryffindor's upcoming Birthday!

Butterbeer Rice Krispie Treats to Celebrate Harry Potter's Birthday!

Butterbeer Krispie Treat Ingredients:
- 6 Cups Rice Krispie Cereal
- 10 oz. Bag of Mini Marshmallows
- 4 TBSP. Butter
- 1/3 Cup Caramel Topping (from the ice cream section)
- 1 tsp. Butter Vanilla Extract
- 1 Cup Butterscotch Morsels

Directions to Make Butterbeer Rice Krispie Treats:
Step One
Spray a 9×13 pan and wooden spoon with non-stick cooking spray and set aside. Measure out butter, cereal, caramel topping, and butterscotch morsels. I like to use measuring cup style pitchers.

Step Two
Melt 4 TBSP. Butter in a Dutch Oven over medium heat and then add one 10 oz. bag of Mini Marshmallows.

Step Three
Stir marshmallows with the wooden spoon until melted and then add 1/3 Cup caramel topping and 1 tsp. butter vanilla extract. Combine well and then remove from burner.

Step Four
Pour 6 Cups of Rice Krispies and 1 Cup of butterscotch morsels into the marshmallow mixture and stir well to coat all of the cereal. The morsels will partially melt into the warm mixture. YUM!

Step Five
Pour Butterbeer Rice Krispie Treat mixture into greased 9″ x 13″ pan. Spray a large spatula with non-stick cooking spray and press the mixture evenly into the pan.

Step Six
Cover with aluminum foil and place in the refrigerator for at least one hour. Once cool, remove from pan and cut with a sharp knife into 20 squares. Store in an air-tight container (if there are any left!)
