Butterbeer Rice Krispie Treats Inspired by Harry Potter
There is honestly nothing more refreshing than an ice-cold frozen Butterbeer after a hot morning spent in Diagon Alley at Universal Studios. After the ride lines get too long, we like to skip the crowds and sneak away to a quiet table at the Leaky Cauldron and indulge in this sweet and creamy frosty concoction. Inspired by this signature Harry Potter beverage, I am sharing my Butterbeer Rice Krispie Treats today in honor of the son of Gryffindor's upcoming Birthday!

Butterbeer Krispie Treat Ingredients:
- 6 Cups Rice Krispie Cereal
- 10 oz. Bag of Mini Marshmallows
- 4 TBSP. Butter
- 1/3 Cup Caramel Topping (from the ice cream section)
- 1 tsp. Butter Vanilla Extract
- 1 Cup Butterscotch Morsels
Directions to Make Butterbeer Rice Krispie Treats:
Spray a 9×13 pan and wooden spoon with non-stick cooking spray and set aside. Measure out butter, cereal, caramel topping, and butterscotch morsels. I like to use measuring cup style pitchers.
Melt 4 TBSP. Butter in a Dutch Oven over medium heat and then add one 10 oz. bag of Mini Marshmallows.
Stir marshmallows with the wooden spoon until melted and then add 1/3 Cup caramel topping and 1 tsp. butter vanilla extract. Combine well and then remove from burner.
Pour 6 Cups of Rice Krispies and 1 Cup of butterscotch morsels into the marshmallow mixture and stir well to coat all of the cereal. The morsels will partially melt into the warm mixture. YUM!
Pour Butterbeer Rice Krispie Treat mixture into greased 9″ x 13″ pan. Spray a large spatula with non-stick cooking spray and press the mixture evenly into the pan.
Cover with aluminum foil and place in the refrigerator for at least one hour. Once cool, remove from pan and cut with a sharp knife into 20 squares. Store in an air-tight container (if there are any left!)

Butterbeer is a popular wizarding beverage described as tasting “a little bit like less sickly butterscotch“. It was served at numerous locations in the wizarding world and had a very slight alcoholic content. Students of Hogwarts School of Witchcraft and Wizardry would often buy it when visiting Hogsmeade. In Diagon Alley, the drink is known to be sold at the Leaky Cauldron. (source: Harry Potter Fandom website)

We are huge Potterheads at our house, and can’t wait to try these. Love your bookmark too! Thank you so much for sharing!
Thanks, Chas – they were DELICIOUS!! And the crafts are quick and easy!!
Those sound delicious! We are huge Harry Potter fans and had plans/tickets for Universal Studios this spring that I’m pretty sure we won’t be able to use now. At least we can still enjoy Butterbeer treats at home. Pinned.
They didn’t last long at my house!!
These sound so good! I love caramel anyway and imagine this tastes really delicious. Thanks for the recipe!
They are DELICIOUS! Enjoy!! 🙂
This looks and sounds so yummy. I tried to make butter beer at home one time and it just didn’t taste as wonderful as they do at the resort. I have chosen this post as one of our features this week in honor of Harry’s birthday. Thanks so much for sharing! Pinned of course. #HomeMattersParty
Thank you for the feature, Donna! I understand about recreating actual butterbeer, there really is nothing like it outside Universal. 🙂
This dish looks and sounds really delectable. I once attempted to create butter beer at home, but it didn’t turn out as well as the resort’s version. This week, in honor of Harry’s birthday, I’ve picked this post as one of our featured posts. Thank you very much for taking the time to share your knowledge!
